- Always sift the Dry Ingredients altogether, 2/3 times & then, mix the Zests to it & keep aside.
- In another bowl beat the eggs until foamy & then add in the sugar and beat well again until it's soft peaks formations.
- Now, in the Dry ingredients bowl mix the EVOO & orange juice nicely until all well combined and incorporated.

- Once baked- Take it out, allow it to cool completely & then flip it onto it's bottom side (refer the pics), garnish with the sprinkled icing sugar and orange slices/zests, etc. according to your choice.
- Since, this is called the UPSIDE DOWN CAKE It's to be served: at it's bottom part as the UP & top most part at it's DOWN.
